Calling for pumpkin soup...........

My friend Jen was recently asking me if I knew a good pumpkin soup recipe. I shared mine with her, but it's kind-of a basic one. I know Renata, you mentioned an interesting one recently on your blog....... I wondered if you could add it into a comment here? Also, Cathy, you have a delicious one with roasted vegies.........

Pumpkin soup is always yummy in winter, so if you have a good recipe, please share it!

No other news for tonight as I'm really really tired. Got to go to bed! I have borrowed a camera for the day tomorrow and plan to catch up on some pictures as William has changed heaps since I last photographed him. Babies change so quickly, it's amazing. :)

Thanks Min! Always on the lookout for a good 'tried and tested' recipe! Actually, funnily enough I stumbled upon a pumpkin soup recipe tonight which, having just made up, seems very nice. It has 1.5kg pumpkin, 2 onions, 1 tblsp garlic, 3 tblsp curry powder, 600ml cream and 1L chicken stock. Basically onion, garlic and curry powder in first to saute. Add pumpkin and stock and bring to boil then simmer until tender. Blend all together and add cream (or in my case coconut milk!). Really nice 'meaty' flavour as my husband said...hmm, I think that was a compliment! Will try it out on some guests (guinea pigs) tomorrow night!:-)

We had a nice pumpkin soup last night (of course the kids didn't like ....what's new???)
I found it at Taste.com.au.
It was called 'Perfect Pumpkin Soup'.....I couldn't be bothered making the pesto that went with it, but it was yum on it's own.

Sorry I'm so late in reading this post - I was really busy yesterday - will update with why later. Here's my recipe: 3/4 pumpkin (or a whole one if it's small; 2 potatos; 1/2 large sweet potato;2 onions; 1 carrot; 4 rashers bacon ( I use shortcut) - Cut up all these veges & boil with 1 chicken stock cube til soft. Blend up mixture (I use my stick blender) & add 250mls cream & chicken stock, salt& pepper to taste. Easy & the kids all LOVE it!! Hope this is helpful.
